Recipe Highlight: Apricot Jam & Hot Cross Bun Bread and Butter Pudding
Embrace the comfort of a classic bread-and-butter pudding elevated with a zingy apricot jam twist!
Ingredients:
- 6-8 hot cross buns, halved horizontally
- 4 tbsp Naked Jam apricot jam (plus extra for glazing)
- 16 floz whole milk
- 8 floz of double cream
- 3 large eggs
- 100g cup granulated sugar
- 1 tsp vanilla extract
- A handful of dried apricots, chopped (optional)
- Butter for greasing
Method:
- Preheat your oven to 180°C (160°C fan) or 350°F. Grease a medium-sized baking dish with butter.
- Spread a thin layer of apricot jam on the cut side of each hot cross bun half. Arrange the buns in the dish, slightly overlapping, jam-side up. If using, scatter the chopped dried apricots between the layers.
- In a saucepan, gently heat the milk and cream until warm. Do not boil.
- In a bowl, whisk the eggs, sugar, and vanilla extract until combined. Gradually add the warm milk mixture, whisking continuously to avoid scrambling the eggs.
- Pour the custard mixture evenly over the buns, ensuring they’re well-soaked. Let sit for 10 minutes to absorb.
- Place the dish in the oven and bake for 30-35 minutes or until the custard is set and the top is golden and slightly crisp.
- Warm an extra apricot jam and brush it over the pudding for a glossy finish.
- Serve warm with cream or custard.
This pudding celebrates spring flavours—perfect for gatherings or a cosy weekend treat!
